What are you legally prevented from doing if you've been in a mental institution? (US)

I've been looking up what you can and cannot do if you've been in a mental institution, and can't find any answers.

This stemmed from a conversation I had with my mom where she was telling me that I cannot go into the Criminal Justice field OR Social Work , since I've been (twice) in a mental hospital. I thought that there was a difference between having been Admitted and Committed?

For reference, I live in California and South Carolina (and am planning on possibly living in North Carolina after I graduate). I'm also 20 years old. What jobs can I not legally take because I've been in a MH?

PS: Can you adopt a child or be a foster parent if you have an MI? I've wanted to be a foster parent or adopt a child when I grew up since I was in high school.
