How do you interview backend developers?

I need to hire a backend dev for asp.net work but I am a little unsure on how to test their skills.

I've been watching youtube coding interviews and they usually revolve around doing some weird string or array manipulation that has no bearing on the type of work I do. I feel like if I studied coding challenges I could get really good at them but I rdont see any point in them so I am sure I would myself probably do worse than a recent comp sci graduate on that style of coding test.

Really I just want someone who has common sense, strives to do things the right way (not lazy), can use documentation and can understand more advanced advanced algorithms if it comes to it.

Any tips for how to approach the skills test?
